Madge Berryhill’s Molasses Cookies
My Mom and Mrs. Berryhill worked on this recipe for a couple weeks when we lived in Libya (1969). Everyone in my family LOVES these cookies, especially me!
INGREDIENTS
3/4 C butter
1 C sugar
1/4 C molasses
1 egg
2 tsp baking soda
2 C flour
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp cinnamon
1/2 tsp salt
Melt butter - let cool - add sugar molasses, & egg. Beat well. Sift together flour, baking soda, cloves, ginger, cinnamon & salt. Combine with first mixture. Mix well and chill.
Firm in 1 in. balls, roll in granulated sugar, and place on cookie sheet 2 inches apart.
Bake at 375F for 8-10 minutes

Puffed Pancake
I found this recipe in a cookbook Laura got me one year: “Dad’s Own Cook Book,” and claimed it for Sunday mornings. Quick, easy, and delicious! Cut it in half with a smaller pot, it’s great for two people!
INGREDIENTS
6 eggs
1-1/2 C milk
1 C flour
3 Tbsp sugar
1 tsp vanilla
1/4 tsp cinnamon
6 Tbsp (3/4 stick) butter
12-inch cast iron or oven- proof skillet
Blender
Preheat over to 425F
In a blender at medium speed, mix eggs, milk, flour, sugar, cinnamon and vanilla, about 15 sec.
Melt butter in 12-inch skillet by putting into heating oven. Monitor that butter melts, but doesn’t burn (30-45 sec)
Remove skillet from oven, spread melted butter to cover bottom and lower sides of skillet, and pour in the batter.
Return skillet to the center rack and cook for about 20 minutes. Do NOT check before 17 min.
Cut into wedges and serve with syrup, or berries & powdered sugar.

Chili
I love chili. Must come from my Mom’s Tex-Mex upbringing. I took a Betty Crocker recipe and played with it to get the flavor I liked. Enjoy!
INGREDIENTS
2 Ibs. Meat ( ground beef/ beef & Turkey)
2 Lg onions (chopped)
4 cloves garlic (chopped)
2 16oz cans diced tomatoes
2 5 oz cans tomato sauce
2 cans Kidney beans
5 Tbsp Chili powder
1 Tbsp salt
1 Tbsp brown sugar
1 Tbsp Worcester Sauce
1 Tbsp Red Pepper sauce
1 can dark beer
1- 2 oz Bourbon
Brown Meat/ drain
Add ingredients (not beans)/simmer 1 hour
Add beans, bring to boil. Simmer uncovered to consistency.
Serve with Fritos and grated cheddar cheese. (sour cream?)
Should make about 10 1-cup servings

Coffee cake
Stew Griest handed this down from his mother, and I started making it for our family on weekends. It’s moist and delicious! Double and triple the recipe for bigger pans.
In a large bowl, mix:
1-1/2 C flour
3 tsp baking powder
1/2 tsp salt
3/4 C sugar
In a medium bowl:
Melt 1/4 C butter
Add:
1 egg
1/2 C milk
1 tsp vanilla.
In a small bowl:
Melt 2 Tbsp butter
Add and mix:
1/2 C brown sugar
2 Tbsp flour
2 tsp cinnamon.
Combine the wet contents of the medium bowl into the dry contents of the large bowl. Mix well. (Add milk as needed to mix batter)
In 8 x 8 pan, pour 1/2 batter. Add 1/3 streusel mix evenly across batter. Add remainder of the batter to cover evenly, followed by the remainder of the streusel.
Place in oven heated to 375 F. Bake 25-30 min. Test with toothpick.
*Typical recipe is doubled. Yum!

Tips:
- Grill your meat by temperature. You’ll enjoy it more, and will be asked to grill more often. Get a meat thermometer.
- Medium rare for steaks! Please!! That’s where the flavor is.
- Just like life, it’s all in the marinade.
